Vegetarian raclette: keep your eyes open when buying cheese
You don’t have to do without cheese if you want the raclette to be vegetarian.
- When buying cheese, however, you should pay attention to whether the enzyme rennet was used in the production. Since rennet is taken from calves’ stomachs, it is an animal product and is therefore not suitable for vegetarians.
- You won’t find rennet on the ingredients list for cheese. It is not an ingredient, but an auxiliary material for the production of cheese.
- It is best to buy cheese for a vegetarian raclette in a health food store or in an organic shop. There it is usually marked whether rennet was used for production or not.
- If you want to be sure, we present vegan substitutes for cheese in another article.
Vegetables – vegetarian and healthy
Raclette and meat go well together, but vegetables taste just as good.
- Pumpkin bites are great. To prepare, you should cut the pumpkin into small pieces and pre-cook.
- This also applies to other firm vegetables such as carrots or potatoes.
- In addition, peppers, tomatoes, aubergines and zucchini as well as mushrooms or cucumbers are classics from vegetarian cuisine, which are also suitable for a raclette.
