Ernie's green tagliatelle with beetroot and horseradish sauce

Ingredients for 4 servings:

  • 500g tagliatelle
  • 1 jar beetroot, 350 ml
  • 2 tbsp horseradish, from the jar
  • 1 tbsp flour
  • 1 onion(s)
  • 40 g butter
  • salt and pepper
  • curry powder
  • possibly cream
  • possibly feta cheese

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the tagliatelle as usual. Meanwhile, dice the onion and sauté in the butter until translucent. Add the flour to make a roux. Deglaze with the beetroot juice from the jar, adding a little more water if needed. Dice the beetroot and add it to the sauce. Stir in the horseradish and then season with the spices. Add a little cream, if desired. If desired, stir in feta cheese or sprinkle it finely crumbled over the finished pasta dish. This sauce has a slightly sweet taste, but also a spicy kick from the horseradish.
