Ingredients for 12 servings:
- 280 g flour
- 160 g sugar
- 2 tsp baking powder
- 1 cup(s) coffee (espresso), small
- 1 tsp cinnamon
- some salt
- 120 g butter
- 2 eggs
- 230 ml milk
- 1 packet of vanilla sugar
- 100 g chocolate shavings
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Preheat the oven to 175°C. Line the muffin tin with paper baking cups. Sift the flour into a bowl. Add the sugar, baking powder, cinnamon, and salt and mix thoroughly. Melt the butter and pour it into a large bowl. Add the eggs, milk, espresso coffee, and vanilla sugar and mix thoroughly. Gradually add the flour mixture to the butter mixture and mix until the flour is completely incorporated. Finally, fold in 50g of chocolate shavings. Divide the batter evenly among the cases and scatter the remaining chocolate shavings on top. Bake the muffins for about 20 minutes until golden brown.
