Ingredients for 4 servings:

  • 300 g minced beef
  • 200 g minced meat
  • 1 egg(s)
  • 2 rolls, stale
  • 100 g bacon, diced
  • 2 onions, finely diced
  • e.g. salt and pepper
  • n. B. Nutmeg
  • 50 g lard
  • ½ lemon(s), juice
  • 1 cup(s) sour cream
  • little flour

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Knead the meat with the egg, the soaked and well-squeezed bread rolls, the diced bacon, finely diced onion, salt, pepper, and a little nutmeg, then shape it into an oblong, bread-like loaf with slightly moistened hands. Heat the lard, add the loaf, and roast in the oven at moderate heat, basting frequently, until browned and crispy (cooking time: approximately 30 to 40 minutes). If necessary, add about 2 to 3 tablespoons of water and carefully remove the finished “Falschen Hasen” from the pan. Boil off the fat and roasting juices with a cup of water, season with salt, pepper, and the juice of half a lemon, and thicken with the cream to which you have whisked in a very small amount of flour. Bring back to a boil briefly, strain, and coat the “Falschen Hasen,” which has been cut into approximately 1 cm thick slices. Serve with mashed potatoes or boiled potatoes and vegetables, depending on the season.
