Ingredients for 4 servings:

  • 1 kg sweet potatoes
  • 1 bunch of spring onions, in rings
  • 4 tbsp oil
  • 100 g Parma ham
  • Salt and pepper, coarse
  • 8 eggs
  • 8 tbsp milk

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Boil the sweet potatoes in water for 15 minutes. Then rinse, peel, and let cool. Slice the spring onions into rings and set aside some for garnish. Slice the potatoes. Heat 2 tablespoons of oil in a large pan and fry the ham until crispy, then remove. Fry half of the potatoes in the frying fat for about 5 minutes, turning occasionally. Briefly fry half of the spring onions. Season with salt and pepper. Whisk the eggs and milk, season generously with salt and pepper. Pour half evenly over the potatoes and let set for 5 minutes. Then combine them to form an omelet and let set for another 5-8 minutes. Keep warm. Make a farmer’s breakfast with the other half of the ingredients. Divide the omelets and serve with the ham and the remaining spring onions.
