Ingredients for 4 servings:

  • 500 g potatoes
  • 4 small onions, diced
  • 75 g bacon, streaky, diced
  • 30 g margarine
  • 5 eggs
  • 5 tbsp milk
  • 125 g bacon, finely diced
  • 2 tbsp chives, finely chopped
  • salt and pepper
  • Paprika powder, sweet
  • Nutmeg, freshly grated

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the potatoes, bring to a boil in water, and cook for 20-25 minutes until tender. Drain, peel while still hot, let cool, and slice. Fry the bacon in a pan, add the margarine, fry the diced onion until translucent, then add the potatoes and fry until browned. Beat the eggs with the milk, season with salt, pepper, paprika, and nutmeg. Stir in the bacon and chives. Pour over the potatoes and let set for about 10 minutes. Serve with a tomato salad.
