Ingredients for 4 servings:

  • 125 g ham, diced
  • 2 onions, diced
  • 8 eggs, beaten
  • 12 gherkins, diced
  • 12 jacket potatoes, boiled, sliced
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Add the ham, onions, and potatoes in batches to a heated pan (enough to make 4 omelets) and fry over medium heat for about 7 minutes until golden brown. Whisk the eggs and season with salt, pepper, and paprika. Pour the eggs into the pan (allow 2 eggs per person). Add the diced gherkins and let them set. When everything is golden brown, fold the omelet in half (if possible) and serve with more gherkins and ketchup. Serve with bread.
