Farmer's pan with Cabanossi

Ingredients for 3 servings:

  • 400 g potatoes
  • 200 g Cabanossi
  • 80 g spring onions
  • 3 tomatoes
  • 3 eggs
  • 150 g cheese (feta cheese, Gouda or Emmental)
  • 1 tbsp olive oil
  • Salt and pepper, salt, oregano
  • oregano

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

You’ll need a pan with a heat-resistant handle. Alternatively, you can transfer the farmer’s pan to a casserole dish before placing it in the oven. Boil the potatoes, then peel them. Wash and dice the tomatoes. Clean the spring onions and slice them along with the Cabanossi. Heat the olive oil in a large non-stick pan and fry the diced potatoes over high heat. Reduce the heat to medium, add the Cabanossi and fry briefly. Mix the spring onions and tomatoes with the potatoes. Season to taste. Whisk the eggs in a bowl with a little salt and pour over the farmer’s pan. Allow the mixture to set over low heat. Finely chop or grate the cheese and spread it over the farmer’s pan. Place the pan on the middle rack of the preheated oven at 220°C (fan oven) for about 5-10 minutes. Serve immediately.
