Ingredients for 4 servings:

  • 50 g yeast
  • ¼ liter of water
  • 150 g mixed flour (wheat flour with rye flour 1:1)
  • 350 ml water
  • 2 tsp salt
  • 2 tbsp oil
  • 250 g mixed flour (wheat flour with rye flour 1:1)
  • 400 g flour (wheat flour)
  • some flour, for kneading

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Sourdough: Dissolve yeast in lukewarm water and add the mixed flour. Mix everything well, cover, and let the sourdough rise at room temperature for 24 hours. Mix the sourdough with 350 ml of slightly warmed water, add salt, oil, mixed flour, and wheat flour. Knead the dough thoroughly and let it rise for another 30 minutes at room temperature. Then knead the dough thoroughly again. Shape the bread dough into a large flatbread or place it in a baking dish. Place it on a baking sheet and let it rise for another 30 minutes. Score the bread dough with a sharp knife and bake in the oven at 200°C for 1 hour.
