Ingredients for 4 servings:

  • 500 g beans, fresh, thick, cleaned and the inner skins removed
  • Salt
  • 2 garlic cloves, finely chopped
  • 4 tbsp olive oil
  • 1 tbsp vinegar (wine vinegar)
  • 1 handful of coriander leaves, plucked
  • 4 spring onions

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Broad bean salad with coriander

Briefly boil the beans in salted water, drain well, and let them wilt. Mix the beans, garlic, vinegar, and oil. Let cool. Serve the bean salad on plates and sprinkle with the coriander leaves. Young, very tender spring onions can be placed whole on the plates. Thicker, older stalks are best cut into thin rings.
