Ingredients for 1 servings:

  • 200 g oat flakes, wholegrain
  • 250 g sugar, brown
  • 1 tsp baking powder
  • 2 tbsp wheat flour
  • 150 g butter
  • 2 eggs
  • 2 pinches of salt

Working time approx. 20 minutes; Total time approx. 20 minutes

Norwegian oat cookies

Place the oats in a bowl, mix with the melted butter, and let stand for a while. Beat the egg and sugar until creamy. Combine the flour, baking powder, and salt, then stir in the oat and butter mixture. Place teaspoon-sized heaping spoons on a baking sheet lined with parchment paper. Caution: These cookies are very spreadable, so I don’t place more than 16 spoons on one sheet. Bake the cookies on the middle rack at 200°C (400°F) for about 10 minutes using top and bottom heat. Tip: The amount of sugar can easily be reduced: The original recipe, as I received it, calls for 250g of sugar, but I usually bake with 170g. This way, the cookies are still sweet enough.
