Ingredients for 1 servings:

  • 500 g oat flour
  • 90 g wheat flour
  • 15 g potato flour
  • 30 g sugar
  • 70 g butter
  • 60 g lard
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp ammonium bicarbonate
  • ¼ liter of milk
  • Flour for the work surface

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Havrekjæks, a Norwegian recipe from the end of the 19th century

First, mix the dry ingredients thoroughly. Melt the butter and lard, then combine all ingredients in a mixer. Let stand for a while; the flour will absorb the liquid, allowing you to knead it thoroughly and roll it out on a floured surface to a thickness of 2-3 mm. Use a cup to form round shapes. Makes 2 baking sheets, each with 40 cookies. Bake in a preheated oven at 160°C (320°F). The cookies are not sweet and are ideal for topping with sausage or cheese. Oat flour is available from health food stores and organic food stores, which will grind the oats upon request.
