Ingredients for 4 servings:

  • 500 g flour
  • 1 tsp salt
  • 2 eggs
  • e.g. milk
  • 1 bag of dried fruit (baked fruit)
  • n. B. water
  • some sauce thickener (roux)
  • 1 package bacon, diced
  • 2 onions
  • Water (salt water)

Working time approx. 45 minutes; Total time approx. 45 minutes

Dumplings with dried fruit and fried bacon

Mix 500g flour, 1 teaspoon salt, 2 eggs, and the milk into a dough. The dough needs to be very stiff, so use the milk sparingly at first. The dumplings are easy to shape with a tablespoon before being added to boiling salted water. Cook for about 4 minutes. Cook the dried fruit in water and thicken with a roux. Fry the bacon with onions. The crispier, the better and tastier. On Fehmarn, it’s said that a dumpling once “slipped” off a plate during a Klümpessen dinner and hit a windowpane, breaking it. My grandfather always said that if the dumpling bounces like a rubber ball, it’s good.
