Fermented Almond Cheese

The perfect fermented almond cheese recipe with a picture and simple step-by-step instructions.

  • 125 g Peeled almonds
  • 5 El Bread drink
  • Salt and yeast flakes to taste
  1. Soak the almonds in water for 24 hours. Drain and rinse. Puree with the bread drink and place in a closed glass. Let it ferment at room temperature for 24-78 hours (that depends on the ambient temperature, the colder it is in the room, the longer it takes).
  2. When the cheese has taken on a slightly fermented taste, stir in the salt and yeast flakes. I also stirred wild garlic paste into my almond cheese (approx. 1 heaped teaspoon).
