Fermented strawberry lemonade

Ingredients for 6 servings:

  • 1 liter of water
  • 3 tbsp sugar
  • 3 tbsp lemon juice
  • 1 tbsp whey
  • 300 g strawberries

Instructions

Working time approx. 10 minutes; Rest period approx. 3 days; Total time approx. 3 days 10 minutes

Combine the water, sugar, lemon juice, and whey in a sealable glass container and stir until the sugar dissolves. Wash and chop the strawberries, and add them to the container. Seal the container tightly and let it stand at room temperature for two days. Shake briefly two to three times a day. Taste the lemonade after two days. If the carbonation isn’t strong enough, reseal the container and let the lemonade rest (ferment) for another day. Then skim off the strawberries, refrigerate the lemonade, and consume within a few days. If desired, garnish the lemonade glasses with fresh strawberries. Note: Fermentation with whey can produce small amounts of alcohol, less than 0.5% vol.
