Feta and tomato pancakes

Ingredients for 4 servings:

  • 3 large tomatoes
  • 200 g feta cheese
  • ½ bunch parsley, fresh
  • 8 tbsp olive oil, alternatively basil oil
  • 3 tbsp Italian herbs
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Wash the tomatoes and drain the feta. Slice each of the feta and tomatoes. Wash the parsley, pat it dry, and remove the stalks. Either brush a suitable baking dish with basil oil, or fold four rectangular shapes from doubled aluminum foil. Brush these with a little basil oil as well. Layer the feta, tomatoes, and parsley leaves in the dish like roof tiles. Mix the Italian herbs with the pepper and sprinkle the contents of the pans with it. Place the pans on the grill for 15 minutes. Drizzle with the remaining basil oil before serving.
