Feta pesto

Ingredients for 1 servings:

  • 100 g feta cheese
  • 4 cubes of leaf spinach, frozen, 1 cube corresponds to about 25 g
  • 2 cloves garlic
  • 2 tsp parsley, chopped
  • 1 tbsp pine nuts
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

First, take the spinach out of the freezer and let it thaw slightly. Meanwhile, heat a pan without any fat and brown the pine nuts until they begin to smell aromatic. Then, peel and roughly chop the garlic. Chop the feta, pine nuts, and the thawed spinach as well so they can be puréed more easily. Place all the ingredients in a tall, narrow bowl and purée with a hand blender until smooth. Finally, season the pesto to taste. This slightly different pesto can be used like the original, made with oil, seeds, hard cheese, and herbs, as the consistency is very similar. It tastes just as good as a sauce for pasta and potatoes as it does as a spread on bread or as a delicious addition to a vinaigrette!
