Feta potatoes with salt

Ingredients for 4 servings:

  • 1.2 kg potatoes
  • 300 g feta cheese with olives and pepper pieces
  • 1 sprig(s) rosemary
  • 2 tbsp sea salt
  • 3 tbsp olive oil
  • 4 tomatoes, ripe
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 pinch(s) of sugar
  • Cayenne pepper
  • 3 tbsp coriander, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the potatoes and quarter them lengthwise. Dice the feta. Brush a baking sheet with olive oil. Arrange the potatoes and feta on top and sprinkle with rosemary sprigs and sea salt. Bake in a preheated oven at 200°C for about 25 minutes. For the salsa, wash and finely dice the tomatoes. Finely dice the onion and mince the garlic clove. Place everything in a bowl, mix thoroughly, and season with sugar, salt, and pepper. Sprinkle the salsa with coriander leaves and serve with the feta potatoes. Tip: Instead of feta, you can also use goat’s cheese and sprinkle with sunflower seeds.
