Ingredients for 7 servings:
- 1.3 kg fig(s), ripe, fresh
- 1 liter apple juice
- 1 ¼ kg gelling sugar 2:1
Instructions
Working time approx. 20 minutes; Rest period approx. 1 day; Cooking/baking time approx. 4 minutes; Total time approx. 1 day 24 minutes
according to a Croatian recipe
Cut the figs into small pieces. Add apple juice and gelling sugar and let stand overnight, preferably 24 hours. Then boil for about 4 minutes and pour into boiled jars. I have a fig tree in my garden, so I try out lots of jam recipes. Pure figs as jam don’t give me enough flavor, and many recipes have too many ingredients, leaving no room for the delicate flavor of the figs. In Croatia, a neighbor gave me her simple but delicious recipe, which I now use as my standard. The apple juice gives the jam a kick of acidity, and the apple flavor harmonizes perfectly with that of the figs.
