Fig pancakes with maple syrup

Ingredients for 2 servings:

  • 1 egg(s)
  • 50 ml buttermilk
  • 1 tsp baking powder
  • Salt
  • Cinnamon
  • 40 g flour (dark wheat flour)
  • 2 figs, fresh
  • 2 tsp maple syrup, up to 4 tsp

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Extra low in fat

Separate the egg and whisk the egg yolks and buttermilk. Combine the baking powder, salt, cinnamon, and flour, and stir into the buttermilk. Whisk the egg whites until stiff peaks form and fold into the batter. Rinse the figs, dry them, and slice them. Heat a nonstick pan without adding any oil. Pour a little batter into the pan for each pancake, place a fig slice on top, and cook on both sides. Drizzle with maple syrup and serve.
