South Tyrolean apple cake from the tray

Ingredients for 1 servings:

  • 20 g yeast
  • 55 g sugar
  • 4 tbsp milk, lukewarm
  • 250 g flour
  • 1 egg yolk
  • 60 g butter, soft
  • 1 tsp lemon(s) – zest, grated
  • 1 packet of vanilla sugar
  • 750 g apples
  • 50 g raisins
  • 50 g walnuts, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Airy – light low – fat – feast

Dissolve yeast and 1 teaspoon (5 g) of sugar in milk. Let it swell for 15 minutes. Then knead with 2 tablespoons (20 g) of sugar, flour, egg yolk, butter, lemon zest, and vanilla sugar for 10 minutes. Cover and let rise for 30 minutes. Meanwhile, quarter, core, peel, and thinly slice the apples. Roll out the yeast dough between sheets of baking paper on a baking sheet. Peel off the top layer and cover the dough with apple slices. Sprinkle with raisins, nuts, and 3 tablespoons (30 g) of sugar. Let rise for another 30 minutes. Preheat oven to 180°C. Bake the cake on the middle rack for about 45 minutes.
