Filet Mignon with blue cheese

Ingredients for 2 servings:

  • 1 tbsp butter
  • 2 slices of beef fillet (filet mignon), 3 cm thick
  • 160 ml beef broth
  • 60 ml cognac
  • ½ tsp rosemary, dried
  • 60 g blue cheese
  • Salt and pepper, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Remove the fillets from the refrigerator in good time and allow them to come to room temperature. Heat the butter in a pan over medium heat. Add the fillets and cook for 4 minutes on each side (medium-rare). Place the fillets on plates and sprinkle with salt and pepper to taste. Add the beef broth, cognac, and rosemary to the pan and simmer until it has reduced to about 80 ml. This takes about 5 minutes. Pour the sauce from the pan over the fillets and scatter the blue cheese on top. Serve. Serve with French fries or mashed potatoes and green beans or peas.
