Fine apple muffins

Ingredients for 12 servings:

  • 250 g apples
  • 2 tbsp lemon juice
  • 250 g flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 80 ml vegetable oil
  • 250 g natural yogurt, low-fat yogurt also possible

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat oven to 180°C (top/bottom heat, fan oven 160°C). Wash, peel, halve, core, and dice the apples. Drizzle with lemon juice. Combine the flour with the baking powder and baking soda. Beat the egg. Add the sugar, vanilla sugar, oil, yogurt, and diced apple to the flour mixture along with the egg and mix. Pour the batter into the muffin tins (either greased or lined with paper baking cups) and bake in the middle rack of the oven for about 25 minutes. Let the muffins rest in the tin for about 5 minutes, then remove and let cool.
