Fine Cinnamon Stars

- 250 gr Sugar
- Grated peel of

- 1 tbsp Ground cinnamon
- 350 gr Ground almonds, with skin
- 125 gr Powdered sugar
- 2 Beat the egg white until stiff, pour in the sugar and continue beating for 6-8 minutes. Mix the lemon peel, cinnamon and almonds, fold in and work everything into a smooth dough.
- Place the dough on a piece of parchment paper dusted with flour. Place a piece of cling film on top and roll out the dough about 0.5 cm thick.
- Cut out stars and falling stars from the dough and place on baking sheets lined with baking paper.
- Beat the remaining egg whites until stiff for the topping. Add powdered sugar and stir in. Spread it on stars and falling stars.
