Ingredients
 

  • 3 Egg Whites
  • 250 g Powdered sugar
  • 250 g Ground almonds
  • 2 tsp Lemon juice
  • 1 tbsp Cinammon
  • 1 pinch Salt

Instructions
 

  • Sieve the powdered sugar into a bowl. Beat the egg whites with the pinch of salt until stiff. Add the sifted powdered sugar and lemon juice while stirring. Remove 4 tablespoons of this foam mass and set aside for brushing.
  • Add the ground almonds and cinnamon to the foam mixture and mix everything carefully. Now chill the dough for about 1 hour. Roll out the dough on a floured work surface approx. 5-6 mm and cut out stars.
  • Place the stars on a baking sheet lined with baking paper and brush with the remaining foam mixture. If it is a little too thick, stir with a few drops of cold water.
  • Place the cinnamon stars in the oven at 150 degrees (top - bottom heat) and bake for about 12-15 minutes without the surface taking on any color. After the baking time, take it out of the oven and let it cool down and store it in a tin. The cinnamon stars taste best after 3-4 days.
