Fine fruit cake with quark topping

Ingredients for 1 servings:

  • 120 g margarine or butter
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 60 g sugar
  • 2 eggs
  • 2 tbsp milk
  • 130 g flour
  • 4 g baking powder
  • Fruit of your choice (e.g. cherries, nectarines, rhubarb)
  • 300 g quark
  • 1 pinch of salt
  • 1 tbsp vanilla sugar
  • 4 drops butter-vanilla flavoring
  • 60 g sugar
  • 2 eggs
  • 25 g cornstarch

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

If you choose to use cherries from a jar, drain them first. Soak the rhubarb in sugar overnight: Mix about 500g of rhubarb and 100g of sugar. Drain the next day, just like the cherries. This cake is also highly recommended with nectarines or peaches. Make a batter from the above ingredients. Line a springform pan with baking paper, pour in the batter, and smooth it out. Mix together the ingredients for the glaze and carefully spread 4-5 tablespoons of it over the batter. Top with the fruit and spread the remaining quark glaze on top. Bake in a preheated oven at 190°C for about 45 minutes.
