Greek rice pudding

Ingredients for 4 servings:

  • 200 g rice (short grain rice)
  • 100 g sugar
  • 400 ml water
  • 1 liter of milk
  • 2 eggs
  • 1 vanilla pod(s), pulp
  • 1 tbsp cinnamon
  • 1 tbsp potato flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

a delicious alternative to regular rice pudding – very popular with children

Bring the water to a boil. Add the rice and milk and simmer, stirring constantly, until the rice is tender. Then add the sugar and the potato flour, mix with a little water, and stir into the rice. Separate the eggs and stir the two egg yolks into the rice pudding. Add the vanilla seeds to the cooked rice and stir in. Serve in bowls to cool and sprinkle with cinnamon.
