Ingredients for 1 servings:
- 1 egg white
- 125 g butter
- 125 g sugar
- 1 egg yolk
- 1 pinch of salt
- 1 tbsp lemon juice
- 250 g oat flakes, flower-soft
- 50 g almonds, ground
- ½ tsp baking powder
- ½ tsp speculatius spice

Beat the egg whites until stiff and set aside. Combine the butter and sugar. Add the egg yolks, lemon juice, and salt and mix until creamy. Combine the oats with the almonds, speculatius spice, and baking powder and stir into the butter mixture. Use two teaspoons to place small heaps onto a baking sheet lined with baking paper, leaving some space between each. Chill the heaps for about 20 minutes. Bake the oatmeal cookies at 175°C (350°F) for about 12 minutes. This mixture yields approximately 75 cookies.
