Fine quark stollen

Ingredients for 24 servings:

  • 250 g fruit (mixed dried fruit)
  • 500 g flour
  • 1 packet of baking powder
  • 2 eggs (weight class 3)
  • 1 pinch of salt
  • ½ tsp cinnamon
  • 1 pinch of cardamom
  • 1 lemon(s), untreated, peel
  • 1 packet of vanilla sugar
  • 150 g sugar
  • 200 g butter or margarine
  • 250 g quark (low-fat quark)
  • 50 g almonds, chopped
  • 2 tbsp powdered sugar, for dusting

Working time approx. 20 minutes; Total time approx. 20 minutes

Ideal as a souvenir!

Finely dice the dried fruit. Mix the flour and baking powder. Make a well in the center. Add the eggs, spices, and sugar. Mix with some of the flour until a thick paste forms. Add 150g of chopped fat, the quark, dried fruit, and almonds. Knead everything together. Shape the stollen (15-30cm long) and place it on a greased baking sheet (baking paper works, of course). If desired, place a sturdy aluminum foil rack around the stollen to keep it in shape. A stollen baking pan is ideal. Bake in a preheated oven (electric oven 175°C / gas mark 2) for 60-80 minutes. Melt the remaining fat and brush it over the hot stollen. Dust thickly with powdered sugar. Done! Of course, you can also fill the stollen with marzipan. You can also omit the almonds and replace them with other nuts or candied orange and lemon peel.
