Finnish Swede Casserole I

Ingredients for 4 servings:

  • 1 large turnip(s) or
  • 2 small turnips
  • Salt
  • ½ cup(s) cream
  • 25 g breadcrumbs
  • 2 eggs
  • 3 tbsp syrup
  • a few nuts, grated

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Peel and dice the swede, and cook in lightly salted water until soft. Drain and puree. Let the breadcrumbs swell in the cream and then mix into the puree. Beat the eggs and stir into the mixture along with the syrup and nuts. Add a little cooking water if the mixture is too thick. Butter an ovenproof dish, pour the mixture into it, and indent the surface with a spoon. Bake at 175°C for about 1 hour.
