Fish salad à la Grandma Beyer

Ingredients for 6 servings:

  • 1 ½ kg potatoes
  • 5 salted herring
  • 200g salami
  • 200 g meat sausage
  • 200 g aspic (pressack), white
  • 1 onion(s)
  • 4 gherkins
  • 1 jar mayonnaise
  • salt and pepper
  • Vinegar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 day 2 hours; Total time approx. 1 day 2 hours 30 minutes

Soak the salted herring for 24 hours. Boil and peel the potatoes. Debone the salted herring and cut into small cubes. Cut the salami, pork sausage, white pressed sausage, and gherkins into small cubes and mix with the diced potatoes and herring. Peel and dice the onion, and stir it in. Fold in the mayonnaise and season with salt, pepper, and vinegar. You may want to use a little less mayonnaise at first, as too much will only make the salad taste like it. Let it sit for about 2 hours. Serve with fresh baguette and a glass of white wine.
