Ingredients

  • 300 g Crayfish tails
  • 1 Apple, sour
  • 1 Onion
  • 0,5 bunch Parsley

The dressing

  • 4 tbsp Dressing base cream made from milk and oil *
  • 1 tbsp Hot onion and chili sauce *
  • 1 tsp Fig mustard*
  • 1 pinch Pepper
  • 1 pinch Salt
  • Possibly a tablespoon of white balsamic vinegar or lemon juice

Instructions

  • For the dressing (I always keep this base cream in reserve) stir up approx. 100 ml room temperature milk with the magic wand and add room temperature oil in portions until a cream is created that has the consistency of mayonnaise.
  • Mix four tablespoons of the cream with fig mustard, onion sauce, salt and pepper and season with a little vinegar or lemon juice if necessary.
  • Peel the apple and onion. Core and grate the apple, cut the onion into small cubes. Clean and chop the parsley.
  • Cut the large crab tails into small pieces, mix with grated apple, parsley and onion cubes and fold in the dressing.
  • Of course you can also use crabs or prawns for this cocktail.
  • * Left to supply: Hot onion and chili sauce and supply: Fig mustard
