Apple and coconut gratin

Ingredients for 6 servings:

  • ½ lemon(s)
  • 2 m.-sized apples
  • 3 eggs
  • 70 g desiccated coconut
  • 2 tbsp Batida de Coco, or coconut syrup
  • 50 g powdered sugar
  • 100 ml whipped cream
  • Fat, for the molds

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 180°C (350°F), fan oven to 160°C (320°F). Squeeze the lemon. Peel the apples, cut them into wedges, and drizzle with lemon juice. Separate the eggs. Whisk together the egg yolks, 30g desiccated coconut, coconut liqueur, and powdered sugar. Whisk the cream until stiff and fold into the mixture. Grease 6 small 10cm tartlet molds or a smaller baking dish and arrange the apple slices in a fan pattern. Pour the coconut mixture over the apples and sprinkle with the remaining desiccated coconut. Bake in the oven for 10-15 minutes until golden brown. Serve warm or cold.
