Flat Bread with Sesame Seeds

Ingredients
 

  • 600 g Wheat flour type 405
  • 15 g Yeast fresh
  • 5 tablespoon Milk
  • 1 teaspoon Rock salt
  • 2 Teaspoon (level) Herbs, dried (garlic, rosemary, chilli, thyme, basil ...)
  • 1 Tablespoon (level) Sugar
  • 60 g Organic butter
  • 2 piece Organic egg yolks, fresh
  • Sesame seeds

Instructions
 

  • Put the flour in a mixing bowl. Crumble the yeast in 250 ml of lukewarm water and stir. Warm up the milk slightly. Then pour everything into the bowl, add sugar, salt, spices, warm soft butter and stir with the mixer (dough hook). Finally, knead into a smooth dough with your hands. Cover and let the bowl rest in a warm place for 45 minutes.
  • Place baking paper on a baking sheet. Knead the dough again, place it on the baking paper and distribute it. I gave it a little bit with the rolling pin. Then brush with 2 egg yolks and sprinkle with sesame seeds. Let the flatbread stand for 30 minutes, it will rise again a little (see photo).
  • Preheat the stove to 180 degrees and bake the flatbread for about 20 minutes.
  • The dough has a very good consistency. You hardly notice the spices in the dough, you can certainly add more or other herbs to taste.
  • There was fish fillet from the oven with roasted peppers and onions. Lightly fry the peppers in olive oil with onions and season with salt. Put in an ovenproof dish and put in the oven (about 10 minutes).
