Ingredients for 6 servings:
- 400 g flour
- 2 eggs
- 100 ml milk
- Salt
- 1 pinch of nutmeg
- 100 g smoked bacon
- 20 g butter
- 1 bunch parsley, chopped
- 1 tbsp Parmesan, grated

Mix the sifted flour with the two eggs and gradually add the milk. Continue stirring until you have a thick, bubbling batter. If the batter is too thin, the dumplings will fall apart. Cut the bacon into small cubes and fry them well in the butter. Briefly fry the chopped parsley. Mix into the batter along with the Parmesan cheese and season with salt and nutmeg. Cut out dumplings with a spoon and lower them into gently simmering salted water. The batter will come off the spoon more easily if you dip the spoon in the cooking water first. The irregularly shaped dumplings are ready when they float to the surface. Drain and fry briefly again in hot butter.
