Ingredients for 4 servings:

  • 120 g tofu or quark
  • 1 tsp honey
  • 1 pinch(s) of vanilla pulp
  • 1 tsp flowers (edible wild flowers, e.g. violets, daisies, dead nettle or sweet clover)

Instructions

Working time approx. 4 minutes; Total time approx. 4 minutes

Whisk the tofu with honey and vanilla until fluffy. This mixture will keep in a sealed container in the refrigerator for about two weeks. Serve the spread with fresh flowers over crispy pastries. This basic mixture can be wonderfully varied with fruit puree, herbs, or finely grated vegetables. When it comes to spices, the sky’s the limit. Sweet versions taste delicious with cinnamon, cardamom, ginger, cloves, and allspice. Spicy versions are especially delicious with herbs de Provence or curry blends.
