perfect for a barbecue party, for a casserole dish
Place the flour, sugar, and salt in a bowl. Dissolve the yeast in the water and add it to the flour along with the milk and olive oil. Knead everything into a smooth dough using a food processor or by hand. Cover and let rise for about 15 minutes. Mix the room-temperature butter with the finely chopped herbs and a pinch of salt. In the meantime, preheat the oven to 200°C (top/bottom heat). Roll out the dough on a floured work surface the size of a baking sheet and spread with the herb butter. Spread about 2/3 of the cheese on top. Cut the dough into strips about 5 cm wide. Fold these like an accordion and place in a greased baking dish. Press the remaining cheese into the folds and/or spread on top. Drizzle with a little olive oil and let rise, covered, for another 10 minutes. Then bake on the middle rack for about 20-25 minutes, until the cheese is golden brown. Let it cool slightly and tear off individual pieces or cut into small pieces.
