Ingredients for 1 servings:

  • 4 sachets of vanilla pudding powder
  • 4 m.-sized eggs
  • 4 tbsp sugar
  • 160 ml safflower oil
  • 1 sachet of baking powder
  • n. B. Food coloring, green, yellow and red
  • n. B. Sugar eyes
  • 2 handfuls of berries (raspberries, blueberries)
  • 2 tbsp powdered sugar
  • Lemon juice, a few drops

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Preheat the oven to 160°C fan/convection oven. Whisk or mixer together the pudding mix, eggs, oil, sugar, and baking powder. Scoop two portions into two separate bowls and color each portion with the food coloring. (You can also use vegetable powder, such as spinach or beetroot.) Divide the batter among 12 muffin cups, ensuring a good amount of green appears at the top. Bake for about 15 minutes. After 10 minutes, test the muffins with a skewer. Let the muffins cool and decorate with berries and sugar eyes (see picture). To do this, mix the powdered sugar and lemon juice into a thick glaze. This will hold the decorations together. Enjoy!
