Franconian Asparagus Salad

The perfect franconian asparagus salad recipe with a picture and simple step-by-step instructions.

  • 1 kg Fresh asparagus
  • Water
  • 2 tsp Salt
  • 1 tsp Sugar
  • 1 tbsp Butter
  • Vinegar
  • Oil
  • Pepper from the grinder
  • Chopped parsley
  1. Damage the white asparagus as usual. Bring water to a boil in a tall saucepan. Add salt, sugar and butter and place the asparagus upside down in the boiling water. (It is best not to put the tender heads in the water) and when closed. Let the lid simmer for approx. 15 minutes. Then place the (firm) asparagus in a baking dish.
  2. Season the slightly cooled cooking stock with vinegar, salt, sugar, pepper and a little neutral oil and pour over the asparagus (the asparagus should be covered), then sprinkle with parsley and let it steep. (Serve at room temperature)
