  1. If you plan to preserve the apricots after they have been thawed, you can blanch the fruit before freezing. Pit the apricots by cutting them in half.
  2. Place the apricot halves in boiling water for a minute or two.

  4. Allow the fruit to cool before putting it in the freezer.

  1. If you want to eat the apricots raw after thawing, you can freeze the fruit in sugar syrup.

  3. The rule of thumb here is three parts sugar to two parts water. Put sugar in a saucepan. Then pour boiling water over it and slowly stir in the sugar over low heat until it has completely dissolved.
  4. As an alternative to the syrup, you can sprinkle the apricots with plenty of sugar.
  5. Note that the apricots should always be frozen when they are cool and no longer warm.
