Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 1 liter of oil or 750g coconut fat
  • Salt
  • Paprika powder, sweet

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and wash the potatoes, drain well, and cut into wafer-thin slices. Place the slices on kitchen paper and pat dry. Heat oil or coconut oil in a deep fryer to 160°C. Add the potato slices in small batches to the hot frying oil. Cook until light yellow in 1-2 minutes. Remove with a slotted spoon. Place on a baking sheet lined with kitchen paper to drain. When all the potatoes are pre-browned, heat the oil to 180°C and add the potatoes, one at a time, for another 2-3 minutes. The chips are golden brown and crispy. Remove from the oil and drain. Shake well, season with salt and paprika. Serve immediately. Serve as a side dish with an aperitif or with pan-fried or grilled meat.
