Fresh apple and lemon muffins

Ingredients for 12 servings:

  • 240 g flour
  • 1 tsp baking powder
  • some salt
  • 90 g sugar
  • 60 ml oil
  • 1 egg(s)
  • 125 ml milk
  • 6 pieces of anise (star anise), crushed
  • 200 g apples
  • 1 lemon(s), untreated (juice and grated peel)
  • Powdered sugar, for dusting

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Preheat oven to 180°C and grease the muffin tin or line with paper baking cups. Peel the apples, cut them into small pieces, and drizzle with lemon juice. Add the crushed star anise seeds. Beat the egg, salt, and sugar until frothy. Slowly stir in the milk and oil. Combine the flour, baking powder, and lemon zest and stir into the egg mixture. Fold the apple mixture into the batter with a spoon and quickly pour the batter into the tins. Bake the muffins for about 20-25 minutes until golden brown. Let cool slightly and dust with powdered sugar.
