Fresh asparagus salad with vanilla

Ingredients for 4 servings:

  • 1 kg asparagus, white, fresh
  • ½ bunch chives
  • 3 tbsp lime juice
  • 4 tbsp oil (mild nut oil, e.g. argan oil)
  • 6 tbsp oil (e.g. rapeseed or sunflower oil)
  • 1 vanilla pod(s), pulp
  • salt and pepper
  • n. B. sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Combine lime juice, salt, pepper, and the oils in a bowl. Halve the vanilla pod lengthwise, scrape out the seeds, and stir into the dressing. Finely chop the chives and add them. Peel the asparagus and remove the woody ends. Then slice diagonally into very thin slices and mix thoroughly with the dressing. Finally, season with sugar to taste (I like it a little sweeter and use about 2 tablespoons).
