Fried apple rings

Ingredients for 4 servings:

  • 600 g apples
  • 50 g sugar
  • 125 g flour
  • 20 g butter, melted
  • 2 egg yolks, whisked
  • 4 tbsp liqueur
  • 100 ml milk or beer
  • 1 tbsp brandy
  • Oil for frying
  • Salt

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Peel and core the apples, then cut them into 1/2 cm thick slices. Place them in a bowl and sprinkle with sugar and pour over the liqueur. Let it sit for about 1/2 hour. Meanwhile, for the batter, mix the egg yolks, flour, cooled butter, 1 tablespoon of sugar, and a pinch of salt. Add the brandy and stir in enough milk to form a semi-liquid batter. Let the batter rest at room temperature for about 30 minutes, then stir again before using. Drain the apple rings, dip them in the batter, lift them out in batches, and fry in a large pan with very hot oil until golden brown on both sides. Lift them out and place them on a paper towel to drain. Keep warm until all the rings are fried. Sprinkle with cinnamon and sugar to taste. Insider tip: vanilla ice cream is delicious with it!
