Fried egg on bacon and mushroom toasties

Ingredients for 2 servings:

  • 100 g bacon, cut into strips
  • 1 onion(s)
  • 60 g mushrooms, brown
  • 4 toasties (wheat toasties)
  • 4 eggs
  • pepper
  • Fleur de Sel
  • butter
  • some parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Hearty breakfast with crispy bacon and juicy mushrooms

Clean the mushrooms and finely dice them with the onion. Chop the parsley. Melt a little butter in a pan and heat over high heat without browning. Add the bacon and fry until almost crispy. Add the onions to the bacon and shortly after, add the mushrooms. Season with pepper and fry for about 5 minutes, until the onions are translucent. Meanwhile, toast the toasties and spread them thinly with butter. Melt the butter in another pan over high heat and heat. Crack the eggs into the pan and season with fleur de sel and pepper. Fry until the edges are crispy and the yolk is still slightly runny. Spoon the bacon and mushroom mixture onto the toasties. Place the fried egg on top and sprinkle with parsley.
