Fried egg toast with mountain cheese

Ingredients for 1 servings:

  • 1 slice(s) sandwich toast
  • 2 eggs
  • 75 g mountain cheese
  • 1 tsp butter
  • 1 tsp olive oil
  • 1 pinch(s) paprika powder
  • 1 pinch(s) black pepper, freshly ground

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Heat the butter and olive oil in a pan, crack the two eggs into fried eggs, and add them. I like to pierce them so they run a little. While the eggs are setting, lightly brown the toast in the toaster. Thinly shave the mountain cheese and sprinkle it over the fried egg. Season with a pinch of paprika and freshly ground black pepper. Don’t add any extra salt, as the mountain cheese is salty enough. Once the egg is set and the cheese has melted slightly, spread it on the toast. Serve with a fresh green salad or tomato salad.
