Fried egg with avocado, tomatoes and bacon

Ingredients for 2 servings:

  • 2 slice(s) bread(s) , savory
  • 4 slices of bacon
  • 1 small avocado(s)
  • 2 m.-large tomato(s)
  • 2 eggs
  • some clarified butter
  • salt and pepper
  • some cress for garnish

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 11 minutes

Halve the avocado, remove the stone, and scoop out the flesh from the skin. Cut into wedges and then into bite-sized pieces. Wash and dry the tomatoes, then slice them, removing the stems. Fry the bacon in a pan without any additional fat until crispy, then remove from the pan. Add a little clarified butter to the bacon fat, crack the eggs, and carefully drop them into the fat. Fry over low heat until the egg whites are set. Top the bread with bacon, avocado, and tomato. Season with salt and pepper. Place the fried egg on top and season as well. Serve garnished with cress.
