- 500 g sea salt, coarse
- 1 bunch of thyme
- 1 bunch of basil
- 1 bunch of lavender
- 1 bunch rosemary
- 1 bunch of sage
- 4 olives, black, very finely chopped

Homemade aromatic salt…lasts for years…has the irresistible Mediterranean taste
Wash the herbs and spin them dry in a salad spinner or in a towel. Pick off the leaves and needles. Blend the herbs and olives in a blender until smooth, add the salt, and blend briefly again. Preheat the oven to 150°C and turn off once it has reached the right temperature. Spread the salt on a baking sheet and let it dry in the oven with the door slightly ajar for about 20 minutes. Store the salt in jars with screw lids at room temperature and let it steep for a few days. The longer the salt sits, the more flavor it acquires. This salt will keep for years and is the ideal seasoning salt for all Mediterranean dishes! Whether meat, fish, potatoes, or vegetables!
