Fried goat cheese in hot wine-vinegar-lemon sauce

Ingredients for 4 servings:

  • 400 g cheese (goat cheese)
  • 5 tbsp vinegar
  • 125 ml olive oil
  • 1 tsp, heaped sea salt
  • 2 tsp pepper
  • 1 sprig(s) rosemary
  • ½ bunch coriander
  • ½ bunch parsley
  • 3 garlic cloves
  • 1 lemon(s), the juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Queso de Cabra Asado with a Vinagreta Caliente

Finely chop the parsley, rosemary, coriander, and garlic, and squeeze the lemon juice. Combine all ingredients except the goat cheese and vinegar in a saucepan and heat gently for 2-3 minutes, but do not boil. Then add the vinegar to the sauce. Cut the goat cheese into chunks and fry them in a pan or on a grill (if available) until they are nicely seared on each side. Place the cheese on a plate (earthenware plate). Serve with the dressing. Serve with toasted garlic bread. Note: For this dish, the goat cheese should not be too soft when purchased.
