Fried noodles with chicken and bamboo

Ingredients for 4 servings:

  • 300 g Chinese egg noodles
  • 5 tbsp oil
  • 2 garlic cloves
  • 1 piece(s) ginger, approx. 2 cm
  • 4 spring onions
  • 50 g bamboo shoots
  • 1 red bell pepper(s)
  • 250 g chicken breast fillet(s)
  • 3 tbsp soy sauce
  • Salt

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Cook the noodles according to the package instructions, rinse in cold water, and drain well. Toss with 1 tablespoon of oil. Peel the garlic and ginger and cut into thin slices, and the ginger into strips. Wash and trim the spring onions. Cut into 5 cm long pieces, then cut these lengthwise into thin strips. Drain the bamboo shoots. Wash and trim the bell peppers and cut into thin strips. Wash the chicken, pat dry, and cut into strips. Heat the remaining oil. Briefly fry the chicken with the garlic, ginger, and onions in the oil. Stir in the bell peppers and fry for about 1 minute. Fry the bamboo shoots for about 1 minute, season with the soy sauce. Add the noodles, season with salt, and serve.
